Young tencha leaves shaded for three to four weeks, then deveined and ground into a fine, vibrant green powder. Softer, sweeter, more umami-forward than our everyday matcha. Whisk 1/2 tsp (around 2 g) into 150 ml water at 80°C / 176°F with a chasen (bamboo whisk) until a fine foam forms. This is usucha (thin tea), the everyday way to drink ceremonial matcha. For the richer ceremonial variant, halve the water and double the matcha - that's koicha (thick tea), the traditional bowl preparation. Perfect on its own or with a dash of milk - also beautiful as a latte.
